Part of an esteemed Chablis family, Samuel Billaud struck out on his own in 2009 to found his eponymous domaine. He had previously been the winemaker at Domaine Billaud-Simon, which had been a shining light in the old school Chablis clubhouse of quality. Since the creation of his own label, Samuel has met with great success and moved into a new winery space in 2015 as well as purchasing four hectares of vines that had previously belonged to Domaine Billaud-Simon.

'A blend of three great sites, Les Pargues (35 year old vines), Bas de Chapelot (40), and Les Quarts (90 year old), and some Fontenottes. Bright pale colour. Excellent tension, even bitterness. This definitely needs more elevage so will be bottled later than the Petit Chablis. Some riper notes before a much more saline finish. Impeccable and totally Chablis. Drink from 2025-2028. 'Pretty forceful, direct acidity here. Classic Chablis style. Will age. Comes from two plots situated on the left bank of the Serein, with one positioned below Montée de Tonnerre. They are fermented and kept separate before blending. Mostly hand-harvested.' - Decanter, 92 points
