Beaujolais-born Gilles Paris is in our estimation one of the rising star producers in all of Beaujolais. After making wine for his in-laws in a cooperative, he decided to set out on his own in 2005, and he made his first cuvee with the support of Marcel Joubert. Today, Gilles grows and makes wines from his 8 hectares in Chiroubles, Fleurie, and Morgon. He farms organically, uses native yeasts, and adds just a tiny bit of SO2 at bottling.
Chiroubles is the highest elevation of all of the Beaujolais Cru Villages, and this is just about as elegant and pretty as red wine gets. Flowing with notes of juicy red and black fruits, violet, rose petal, earth, and spice, this silky and beautiful red wine is a prime example of why Beaujolais is more popular than ever.
