Pommeau de Normandie is made by combining 2/3 fresh, clarified apple juice with 1/3 fortified Montreuil Calvados that is aged for at least 2 years. Once combined, the mixture is aged for 8 years in French oak. Considerably older than most available pommeau, this apéritif exudes oxidative fruit and foliage while somehow retaining a shimmer of the bright, grassy style Montreuil Calvados is known for. Like a chilly breeze on a sunny day, this light yet liminal spirit will leave you feeling a little haunted.
