Regular price $54.99Jura-native Marc Soyard runs this ambitious and rising star estate in the city of Dijon. He took over operations just a few years back, and he has crafted one of Burgundy's top hidden white wine gems. Produced from 40-year-old vines grown on limestone soils, this shows that compelling and complex Chardonnay can be produced in the northern part of the Cote d'Or.
Soyard subscribes to the "minimal interventionist" philosophy -- organic farming, native yeast fermentations, no fining or filtration, and just a tiny bit of sulfur added at bottling. He brings the wine up and ages it in older barrels, and the finished wine is complex, soulful, and it offers up contrasting components.
Rich yet bright, and complex but immensely drinkable, it offers up full-bodied and rich yet racy flavors and aromas of peach, apple, citrus zest, sea salt, flint, and mineral. Don't be alarmed by the wine's slightly hazy appearance -- it is unfiltered to preserve its natural flavors, aromas, and mouthfeel, which Soyard believes can be stripped away by filtration.
