The Domaine's Mâcon Rouge is produced from very old Gamay vines planted in the 1920s on calcareous and sandy clay soils. The yields are deliberately low (30 hectolitres per hectare) in order to preserve a good concentration. As with the entire estate, viticulture is organic. Harvests are manual in boxes so as not to degrade the quality of the grapes and avoid oxidation. The wine is made without adding sulfur and with a gentle extraction of color and tannins for a ripe and velvety taste. The ageing, during which the malolactic fermentation takes place, then takes place in oak barrels for about 16 months before bottling without clearing and without filtration. This is an ideal red wine for terrines, cold cuts, meats, grilled meats, powerful fish with spicy sauce, or cheeses.
