Founded in the 11th century by monks at the local abbey, Chateau L'Ermite D'Auzan is today run by father and son Jerome and Tanguy Castillon. The estate is certified organic and biodynamic, and the duo farm some old, south-facing vines planted in rocky soils.
Their lovely rose blends 90% Grenache Gris with 10% Carignan from vineyards in Camargue, just west of Costieres de Nimes. Displaying aromas and flavors of peach, melon, pink grapefruit, citrus zest, and sea breeze, it's dry and oh-so delightful.
