David Bourdaire farms 8 hectares situated in and around the village of Pouillon. This is the northern-most part of Champagne, and the cool and challenging climate is home to some of the largest plantings of the late-budding Pinot Meunier grape. Bourdaire farms organically, all of the work is done by hand, and he finishes his wines with a dosage of zero grams per liter.
His Tradition Extra-Brut is 100% Pinot Meunier, and this will appeal to those who love their bubblies bone-dry. Offering up good texture and weight on the palate, this offers up zesty notes of green apple, quince, almond, and salty minerality. Delicious!
