This naturally made, bone dry sparkler would be labelled as Prosecco were in not for the nifty bottle cap closure (the Italian wine police insist on cork stoppers for the Prosecco DOC). The wine is light, perky and refreshing with delicate notes of citrus, herbs and chalky mineral.
Winemaker Enoteca Bisson is a well known character around the Ligurian coast where he runs a popular wine shop in addition to growing grapes and making wines. He is an expert in local varietals and is known for his meticulous farming practices and penchant for experimentation. He is also the leading force in the region for preserving rare indigenous grapes.
