Made from a single vineyard of organically farmed Pinot Noir planted in 1980 which was one of the first Pinot Noir plots in Spain. The grapes are harvested at night for freshness and only free run juice and naturally occurring yeasts are used during fermentation. The resulting wine is bright, structured and aromatic with fine bubbles and notes of raspberry, licorice and herbal undertones.
