Benoit Touquette grew up in Lyon, and originally wanted to become a fighter pilot or an engineer. Working on bottling lines in Bordeaux to fund his graduate studies, he actually found himself inspired to study oenology. After completing two degrees, he interned in Napa Valley with Andy Erickson, of Leviathan fame.
Arbalest, a classic blend of merlot and cabernet sauvignon, is a fruit forward, robust, layered Bordeaux red wine. dark fruits of black raspberry, black cherry, and juicy plum. Spices of black pepper and cinnamon are present with toast and potpourri.
