'Chateau de Chamilly rises in the heart of a green valley located north of the Cote Chalonnaise, 20 minutes south of Beaune. It was built in the XVllth century by Noel Bouton.

Each of our vines, each climate has its own character. What differentiates them is a sum of little things that do a lot. Each wine has its own identity, and our goal is to let these differences express themselves. We grow as simply and naturally as possible. All current investments are aimed at minimizing inputs. After each harvest, the grapes are carefully sorted to make the most of each vintage.

What do we expect from our Burgundy? To be a pinot noir of gourmet pleasure. Fruit and simplicity but without banality. Its characterful finish is reminiscent of its origins. Manual harvest and sorting, transport in low volume containers. 12-day vinification in temperature-controlled vats with cold pre-fermentation maceration for 3 to 5 days.
The vats are raised or pulled twice a day depending on the stage of fermentation.
Aging 18 months: 12 months in oak barrels and 6 months in vats. Unfiltered.'                   - Winemaker's Notes
