Florence and Francois Bachelier make lovely, traditional, laser-focused Chablis from old vines in the village of Villy. These northerly vineyards are some of the coolest in Chablis, and you can sense that in their chiseled and finely detailed wines.
Their Vieilles Vignes Chablis comes from a parcel of 77 year-old vines, and just 270 cases were produced. Fermented and aged in a mix of stainless steel and older barrels, the finished wine is deeply mineralic, broad, and quite grand. Ripe citrus, green apple, candied ginger, green herbs, and more. Also comes in at just 12.75% ABV.
