Sylvain Pataille is not only one of the top young producers in the Cote de Nuits, he's also a champion of the Aligote grape. Whereas most producers don't give this grape much respect, Pataille treats it like a Premier Cru White Burgundy, and we think it drinks like that too.
Pataille works with a plot of 50-year-old vines, he farms organically and biodynamically, he ferments with native yeasts, and he ages this in a combination of older barrels and in stainless steel, with an extensive lees aging. The finished wine is deeply flavored, broadly textured, and completely captivating.
