Domaine Francis Blanchet Pouilly-Fumé 'Calcite'

Francis Blanchet runs this 8th-generation estate with passion and vigor. He and his family make five different bottlings of Pouilly-Fumé, and their Calcite is produced from Sauvignon Blanc planted on Kimmeridgian soils, just like those found to the east in Chablis. The calcium carbonate compounds found in this "dirt" imbues this wine with a deep mineralic presence.

Bright, energetic, and intense, this mineralic masterpiece throws notes of crushed seashells, fleur de sel, nectarine, quince, and citrus rind. This stuff is screaming to be served alongside oysters on the half shell or any shellfish from the sea, but is also loves to be served nicely chilled on hot days at the beach.
