One such winemaker is Tomeu Llabres of Ca'n Verdura, which he founded in 2012 as a micro-winery in a former auto garage in the village of Binissalem. Dedicated to indigenous varietals and minimal intervention, he is part of a movement to champion the Mallorcan traditions and culture.
His 'Supernova' Blanc bottling is 100% Moll coming from multiple sites within Binissalem. Composed of fruit from vines planted back in 1958, and with 5 months on the lees in stainless steel tank, this bottling shows a fresh and vibrant Mediterranean vibe. Beautiful kiwi, nectarine, and limeade starfruit notes and intermingled with fennel frond, chamomile, spearmint, Marcona almond, and sea breeze in a white wine that really exemplifies why Mallorca is known for some of the most interesting wines in the world.
