Vigneron Juanjo Tellaetxe makes serious and still (not fizzy) Txakolina from his organic vineyards in the Arabako DO. When he's not making deliciously distinctive and natural wines from vines his family has owned farmed for time immemorial, he serves as a priest in the local villages.
Juanjo's Blanco is 100% Hondarrabi Zuri, and it is a fascinating and contemplative white wine that shares some of the traits of a textured Loire Valley Chenin and a Canary Island white. Fermented in stainless steel with native yeasts and aged on the lees for 5 months, this is weighty and lively, with bright notes of green apple, citrus, wildflowers, fennel, and salty mineral. It would be phenomenal with paella or fish stew!
