Pere Mata is the name of the man behind Pere Mata, the winery of which is Mata i Coloma. Working entirely organically and all by hand, he uses (among others) the traditional Cava varietals of Xarello, Macabeu, and Parellada. All of his wines spend at least 2 years on the lees, and are always vintage dated and disgorgement dated, which puts him in a serious league of expression among Cava winemakers!
His n° Cava is bright, fresh, floral, and fruity. It also comes to you with zero dosage, so it will absolutely please dry sparkling enjoyers. Extremely pleasant to drink, and, owing to the extended lees aging, complex enough to reward attention to the glass.
