La Lisse's Soie d'Ivoire comes from Limoux, in the foothills of the Pyrenees, where Chenin was originally planted in the late 1970s for sparkling wine production. As the vines have aged and the region has warmed, the still Chenin coming from Limoux has become increasingly appealing. The grapes are left on the vine until fully ripe, giving the wine its distinctive richness and texture.
"Soie d'Ivoire" translates to "soft ivory silk," and that description fits the wine beautifully. It is lush and silky without sacrificing Chenin Blanc's natural acidity and freshness, with notes of ripe peach, apple, nectarine, flowers, and spice. Neutral French oak adds texture without overwhelming the fruit. A terrific all-around white, this works equally well on its own or with spicy Szechuan, Thai, and Indian dishes, as well as richer seafood.
