Seraphin Sabon, originally from the village of Serignan du Comtat, married Marie, daughter of an owner in Chateauneuf-du-Pape, Romain Jausset. In 1932, he created the "Clos du Mont-Olivet" domain. It was then passed to his eldest son, Joseph, and nowadays is ran by Celine, David, and Thierry, Joseph's grandchildren. 

Their Cotes du Rhone Vieilles Vignes is a classic blend of Grenache, Syrah, Mourvedre, Cinsault, and Carignan. A more restrained style of Cotes du Rhone with beautiful aromatics of red cherry, strawberry, and raspberry fruits. Graphite, burned incense, and garrigue further show why this is a great classic style of Southern Rhone red.
