Seraphin Sabon, originally from the village of Serignan du Comtat, married Marie, daughter of an owner in Chateauneuf-du-Pape, Romain Jausset. In 1932, he created the "Clos du Mont-Olivet" domain. It was then passed to his eldest son, Joseph, and nowadays is ran by Celine, David, and Thierry, Joseph's grandchildren.
Their Chateauneuf du Pape is their flagship bottling. A classic blend of several Southern Rhone varietals, with an emphasis on elegance. Symphonic, fleshy, driven, and full-bodied, with expressive fruits of grilled strawberry, dark cherry, and raspberry compote. Sandalwood, thyme, sasparilla, and baking spice can all be found in the decidedly elegant nose and palate.
