Richard Fouquet is the 5th generation to run this production since 1885. Guiborat has sold their grapes historically, and they do continue to sell five hectares to Laurent-Perrier. However, Richard and his wife Karine craft their own wines as well from their best 3 hectares of vineyards. These are coming from Grand Cru vineyards in Cramant, Chouilly, and Oiry, as well as a vineyard in Mardeuil, where they farm Pinot Munier.
The Guiborat Tethys is 100% Chardonnay coming from the Grand Cru village of Cramant, and sees 24 months sur lattes, with a dosage of 1.5g/L. Fresh, lively, and focused, with great accents of citrus and white flowers supported by a lovely minerality.
