Fermentation is typically whole cluster with native yeasts, emphasizing infusion over extraction, and élevage is carried out with a light hand to preserve aromatic lift and site transparency. The goal here isn’t power—it’s precision, drinkability, and a clear articulation of Jura’s marl and limestone soils.
Aromatically, it’s lifted and high-toned, with wild red berries, tart cherry, and pomegranate layered over rose petal, white pepper, and a faintly feral, earthy edge. The palate is lithe and energetic, driven by bright acidity and fine, dusty tannins, with flavors of cranberry, blood orange, and subtle spice unfolding over a mineral backbone.
