SOLD OUT! Finding great value combined with great price can be very challenging in California. The high cost of land combined with the “boutique” ethos in the state often results in delicious, but expensive wines that the typical wine lover cannot afford to drink on a daily basis.

Trim Cabernet Sauvignon is an exception to that rule in the sense that it comes from great vineyard sites and winemaking is handled by a veteran, highly noted individual.

Ray Signorello owns an estate along Napa’s famed Silverado Trail, and his Cabs typically run in the $50 to $60 range. He is the man responsible for Trim, and for this wine, he gets some grapes from his own vineyards along with fruit from his neighbors and friends in both Napa and Sonoma. The resulting wine is one that offers the drinker immediate accessibility along with the potential for aging in bottle for another 5 to 7 years.

The nose of the wine is dominated by ripe cherry, black cherry, and currant fruit along with subtle notions of dark chocolate, vanilla and roasted herbs. The palate is lush and soft, with a nice balance between ripe fruit, soft tannin and moderate acidity. Put simply, it is soft, richly fruited and packed with flavor. Notes of creamy blackberry, cherry, oak spice and cedar make this a great summer Cab for enjoying with a grilled burger, steak, or barbecued chicken. Come and get it!
