Tavel is one of the most famous dry roses of France. Located just south of Chateauneuf du Pape, it is the only AOC in France that only allows for dry rose production. Chateau Manissy, which dates back to the 17th century, is undoubtedly one of the qualitative leaders of the appellation.
With vines dating back to 1914, the young Florian Andre puts these old, certified biodynamic vines to great use. Unlike most Provencal roses, Tavel sees a longer maceration (juice-to-skin-contact) that leads to a darker-hued and more red-fruited rose. It's almost like drinking a light red, but like all world-class roses, it is best served chilled on a hot summer day.

- Manissy is one of the most respected producers in the AOC of Tavel. They possess some of the oldest vines in Tavel, they are certified organic and biodynamic, and their Tavel always grabs 90+ point ratings.
- A blend of 60% Grenache, 20% Syrah, and 20% Clairette, this pale-ruby-colored wine is dry, invigorating, and luscious. Gorgeous notes of red plum, cherry, raspberry, blood orange, and dusty herbs can be found in the bouquet and on the palate.
- Florian Andre apprenticed with Christophe Delorme at Domaine de la Mordoree, one of the top estates in the Southern Rhone. Today, Manissy's Tavel rivals Mordoree's, but it sells for half the price.
- While this makes for a wonderful aperitif, I enjoy it even more with classic Provencal dishes. Think garlic-y seafood stews, grilled vegetables, and even lamb.
