For those looking for a lovely Blanc de Blancs styled Champagne to toast the holidays with, look no further than Thierry Triolet's Chardonnay-dominated bubbly. A ton of True Champagne for the money, this stuff will be gone in a flash. Just 10 cases made it to NC this year, and we snagged 7 of them.

Thierry and Veronique Triolet are one of the top producers in the Cote de Sezanne, prime territory for Chardonnay cultivation. In addition to growing grapes for their own wines, they also sell grapes to top houses like Krug and Billecart-Salmon. They are highly respected growers and producers, but their wines sell for half the price of the larger Champagne houses.

The Triolet family have grown grapes for years, mainly to sell to the  large negociant Champagne houses to the north. With clients like Krug and Billecart-Salmon, husband and wife Thierry and Veronique came to the conclusion that the grapes they were growing, almost entirely Chardonnay, must be a cut above the rest. Trust me, they are.

The decision was made shortly thereafter to start producing their own wines. Today, Triolet's wines are enjoyed in Paris just as much as they are in Asheville :) All I can say is that drinking their entry-level Champagne is always truly satisfying. Despite the high proportion of Chardonnay, this is still a fleshy and richly textured bottle of bubbly.

Their Brut is a blend of 80% Chardonnay and 20% Pinot Noir, and the finished blend contains three different vintages of wine. This is quite unique and the finished wine certainly benefits from more mature wines with more complexity and nuance. Aged for 24 months sur lie prior to disgorgement, the resulting Champagne is a thing of beauty.

Boasting aromas of lemon curd, ripe apple, white flowers, pastry crust, and mineral, this is a wine that immediately lets you know you are drinking sparkling wine from the Champagne region. Plump and full on the palate, this one still pulses with energy and vibrancy, finishing long and delightful.

For those who like a plumper and more generous Blanc de Blancs Champagne, this will be very appealing. Unfortunately, we only have 84 bottles to offer. Those will be long gone by the time New Year's Eve hits, so buy early. Cheers and Happy Holidays!
