This is a wine that really surged in sales over the holidays this past year, and there's a good reason for that. IT'S FANTASTIC! The 2021 Fableist Cabernet Sauvignon is also a perfect example of the friendly and plush style of Cab that Paso Robles is gaining a reputation for. Ripe and rich yet fresh and zesty, this is wonderfully balanced, and it offers stunning Cabernet flavors at a really good price.

Put together by Andrew Jones, the same fella' that makes the Field Recordings Wines, most notably the Fiction Red Blend, this is a ton of wine for the money.

The Fableist Wine Company is a collaboration between two Central Coast all-star winemakers and vintners. Andrew Jones, who has worked in and planted numerous vineyards on the Central Coast, handles grape-sourcing for the operation. The other part of the equation is winemaker Curt Schalchlin, founder, owner, and winemaker of the heralded winery Sans Liege.

One sniff and sip of this Cab, and you immediately know that these two guys know what they are doing. I am particularly impressed with their minimal interventionist methods for producing this wine. A blend of grapes from seven different organically and sustainably farmed vineyards scattered throughout Paso Robles, it is bottled with no additives, it is vegan-friendly, it is fermented with native yeasts, and it is finished with minimal sulfur. 

Very few California Cabs get labeled as "natural wines," but I guess this wine qualifies for that designation. Most importantly, this stuff tastes really, really good, and I find that my body handles this wine very well. Translated, after 2 or 3 glasses, I don't feel heavy, wheezy, or sniffly, and I can't say that about many Cabs. I'll be honest, back in early December, I drank an entire bottle (part with dinner, part after dinner), and I honestly had no ill effects the next day. 

I'm not at all saying this wine is healthy, as it still contains alcohol, but if you find yourself struggling with allergic reactions to bigger red wines, you might want to give this a try. Offering up classic varietal character and style, this comes roaring out of the gates with aromas of dark cherry, dark currant, mulberry, cedar, vanilla, and brown spices. Full-bodied and stylish yet supple and smooth on the palate, the structure here is plump and rounded....that's another way of saying it is smooth :)

It will keep you coming back for sip after sip, I promise you that. At less than $26, I'd take this any day over some of the more popular, more expensive and "gussied up" Cabs coming out of Paso. Share it with your Cab-loving friends, and I'll bet you a bottle they'll think you spent $40+.
