
Passerine is a new sparkling wine brought to us by our friends at the Paris Wine Company, one of our favorite young importers. It's a beautiful label that is an ode to the local songbirds that are commonly found in the vineyards of Limoux, France's oldest sparkling wine zone.
Their Blanc de Blancs is a blend of 90% Mauzac and 10% Chardonnay made by Jacques Calvel of the J. Laurens winery, one of the top estates in the region. The grapes come from Laurens’ high-altitude vineyards, which are farmed organically, and the finished wine is dry, bright, minerally, and of a very high quality.
