So what is Crémant? I know there's some confusion here, as there is also a famed, Grand Cru Champagne village called Cramant. A Crémant is a sparkling wine made exactly like Champagne, but made outside of the Champagne region. Made methode traditionelle, where the second fermentation and the aging takes place inside the bottle, wines made in this fashion possess finer bubble and a more elegant style.
That is definitely the case here -- the Prieuré Crémant is aged for 24 months on the lies, the spent yeast cells upon which the wine rests. That's 9 more months of aging than what is required for Champagne, and that longer aging helps the wine settle and become more balanced and complex.
