I'm sure many of you are asking what "declassified" means. Let me explain. Many quality-minded producers possess vineyards that lie just outside the appellation "county line" if you will. While these vineyards possess the same soils, the same climate, and similar growing conditions, they are not allowed to put the name of the AOC on their label.
That's exactly what you get here, a wine that is not allowed to carry the Pouilly Fuisse name on its label, but trust me, this drinks like a much more expensive White Burgundy. Produced from vines with 30 to 50 years of age under their belt located within and just outside of Pouilly Fuisse, this is a serious wine at an incredible price. Fermented and aged on the lees in stainless steel, this will appeal to lovers of French Chardonnays like Colline aux Fossiles and Talmard Macon.
Boasting great concentration and depth of flavor paired with juicy acidity and moderate complexity, this is one of the great Chardonnay values in the world. Nicely rounded and just a bit buttery, this exhibits aromas and flavors of ripe pear, white peach, green apple, white flowers, and spice. The palate is lively and the finish is pretty and harmonious.
Serve this gorgeous white as an aperitif, but it would also be a perfect match for fish or seafood as well as white meat and pasta in a creamy sauce. I have a sneaking suspicion this will sell down fast, so I wouldn't wait too long to place your order.
