As a team, we cannot stop talking about how good this wine is. We've all taken it home, and we've all come back the next day with rave reviews. There is a style, a substance, and a presence about this wine that I usually only find in wine that cost a lot more. It's so pure, transparent, and engaging, and I'm getting excited writing about it : )
Composed entirely of Melon de Bourgogne planted in the year of my birth (1974), these old, biodynamically-farmed, low-yielding vines give us a very Chablis-like white that flows with concentrated and broad flavors of apple, pear, lemon oil, tangerine, and crushed rock.
Lively, full-flavored, and long on the finish, I want you to drink this with same reverence you'd drink a top-flight Chablis. Let it open up to reveal its many splendors because it will do just that. If you have the opportunity, drink it with pretty much anything "of the sea," from oysters to sea bass.
No food required though, this makes for a wonderful aperitif, and if you serve it to your guests at this year's holiday party, they are going to think you're quite the advanced wine enthusiast : )
