Domaine Bailly-Reverdy represents 65 years of Sancerre excellence. Founded in 1952 when Bernard Bailly and Marie-Thérese Reverdy married, their wines have been staples on Michelin-starred restaurant wine lists for many years. And the family’s wines are better than ever today. Fairly new to the North Carolina market, I am incredibly proud and excited to share this wine with you.
If you were to ask any sommelier or wine monger where the best vineyards in Sancerre lie, most would tell you Chavignol. In fact, they would tell you that it’s one of the best places on the planet to grow Sauvignon Blanc. Marked by its steep vineyard sites blessed with limestone and clay soils, everything is done by hand here. And the resulting wines are noted for their intense minerality and their pure and precise flavors.
Aurelian Bailly, who runs the estate today, is about as “clean” as one can get when it comes to farming and fermentation. The estate uses cover crops, they don’t irrigate, they use no chemical fertilizers, and they harvest by hand. Fermentations are carried out in stainless steel with native yeasts and the finished wine “sings loudly” of grape and place. This is no “industrial” Sancerre produced in a quick and thoughtless fashion due to high demand of Sancerre. Not even close!
This is truly artisanal white wine that reminds me that Sancerre is one of the greatest white wines on the planet. Possessing much more texture and body than most Sancerres, this one explodes out of the glass with complex and satisfying notes of pear, lemon zest, citrus oil, flint and green herbs. Beautifully pure and concentrated on the palate, it tastes of ripe citrus and green apple, with that classic minerality that lets you know this could only come from Sancerre. WOW!
Like all world-class white wines, I recommend serving this one at about 50 degrees — not too cold, but not room temperature either. A pleasure to drink by itself, it would also make a fine companion to just about any sort of seafood and herb preparation. Or just get the best chevre you can get your hands on along with a baguette and go to town.
