Established in 1990, Cabriz is one of the leading and best-selling producers in the Dao region. This zone in North-Central Portugal is known as the “Portuguese Burgundy” as the wines possess wonderful elegance, minerality, and delicate aromas and flavors. And this is a wine that gives you a great introduction to a classically styled Dao red.
Fermented in stainless steel and aged in French oak for 6 months, this is a wine that exhibits a nice balance of fruit, mineral, and savory complexity. Medium-bodied, supple, and smooth, it offers up notes of ripe cherry, plum, white pepper, rose petal, and smoky herb. Not too tannic but possessing good acidic freshness, it goes down a little too easy.
A perfect house or cocktail red, it also pairs wonderfully with everything. I’m not kidding! I’ve had it with pizza, roast chicken, grilled mushrooms, salmon, and a charcuterie board. The wine’s natural acidity makes it work well with food, but this freshness also makes it great without food.
