Vincent Couche is one of the all-stars of the grower Champagne movement. He farms his vineyards in the Cotes des Bar biodynamically, a rarity in the region, and he ages all of his wines way longer than what is required by law. For this specific bottling, the wine is aged for an extended 5 years on the lees before it is disgorged and bottled.
A blend of 84% Pinot Noir and 16% Chardonnay, Couche bottles this one with zero dosage, thus the Extra Brut designation, and the long aging imparts wonderfully complex and dramatic style to this wine. Creamy, yeasty, complex and mineralic, this is a ton of Champagne for the money.
