No discussion of dry Provencal rose would be complete without a thorough discussion of Chateau Peyrassol. Located in the back country hills of the Var, north of St. Tropez, the Commanderie de Peyrassol was founded by the Knights Templar and the first recorded harvest at the estate occurred in 1256 and winemaking has continued uninterrupted throughout the centuries.

It is this singular estate that has helped elevate the reputation of the Cotes de Provence more than any other in the region. Importer Neal Rosenthal has worked in happy harmony with with this gorgeous estate since 1981, and not much has changed. That’s good.

When I tasted a tank sample of this a few months back, I knew I had to have it. A blend of equal parts Cinsault and Grenache, with 2% Viognier, this is the essence of Provencal rose. Gorgeously aromatic, fully dry, crisp and invigorating, this is the kind of dry rose that is enjoyed with or without bouillabaisse along France’s Mediterranean coast with reckless abandon.

Oh yeah, I forgot to mention that the estate is fully organic. Yep, they farm 80 hectares of vines without the use of synthetic fertilizers, pesticides or fungicides. Organic foliar sprays are used to help prevent chlorosis (nutrient deficiencies) and sheep manure is the only fertilizer used after the planting. The age of the vines, the rocky terrain, and the hot, dry climate establish conditions that severely restrict yields.

This highly expressive rose is just what you need for your spring parties and porch sipping. Try this one with a salad nicoise, any sort of fish or seafood, and lots of fresh vegetables. My mouth is watering just thinking about it.
