The Dumonts have farmed vineyards in the Aube district of Champagne for over 200 years and today the estate is run by three brothers.  This part of Champagne is a bit warmer than most so Pinot Noir does especially well here. Thus, this wine is composed of 90% Pinot Noir and 10% Chardonnay and after completing secondary fermentation in the bottle, it is allowed to rest on the fine lees for 24 months.

The combination of the assemblage of the wine, the warmer daytime temperatures and the extended aging on the yeast are what gives this wine its rich and full bodied personality.  Upon popping the cork, you can tell that this is no shy Champagne — ripe citrus, rhubarb and orchard fruits pop out on the nose followed my more complex notes of brioche, buttered toast and musky herbs.  Juicy and refreshing on the palate, it’s a touch lower in acidity than many Champagnes, but there is no question that it is dry.
