Good old Bollinger! One of the grand old houses of Champagne, this is always one of the more overt, decadent, and full bodied Champagnes. Based primarily on Pinot Noir, with smaller amounts of Chardonay and Pinot Meunier, it is broad, rich, and absolutely delicious. Carmelized peach, spiced apple, freshly cooked baguette, and roasted nuts inform the nose and the palate of this highly rated bubbly. This is one of the reference point estates of Nimes, just west of Avignon and Chateauneuf du Pape territory. Owner and winemaker Francois Collard was the long time oenologist at Chateau Lafite Rothschild in Bordeaux before returning home to take over his family’s estate. His red wine is a blend of 45% Grenache, 30% Syrah, 15% Mourvedre and 10% Marselan. With a big core of warm, spicy, perfectly ripened cherry, plum and blueberry along with notions of Provencal herbs, pepper, and smoked meat, this is one hearty red!
